Who says it’s hard to eat healthy?! Well not me because here is a quick and easy way to have a filling meal where you are not left feeling guilty. Eating healthy does take preparation but not a whole lot. Lately, it’s actually becoming easier to eat healthy especially on the go, but what about when you are home. This recipe for chicken and veggie whole wheat quesadillas contains a list of things that can be easily grabbed at your local grocery store.I popped out of bed one morning over the Christmas break that we recently had and went to the kitchen and immediately go to cooking. We had woke up so late we were actually venturing into the noon hour. We still needed to eat nonetheless so chicken and veggie whole wheat quesadillas it was. I am not sure if you guys have noticed but I hardly ever cook simple. My brain and body won’t let me wake up and put cereal in a bowl and add milk. I guess that it’s good for my guys because they like to eat.I start these quesadillas by cooking the red onion and mushrooms in a tablespoon of grape seed oil. When cooking these two together they achieve a nice carmelization. I cook these veggies until the onions are soft. Then they are removed from the pan and set aside.Time to cook the spinach. See. This is spinach fresh. And Actually fresh spinach would not be bad in a quesadilla. I just got an idea, however, I will try the fresh spinach in a quesadilla the next go round. Hmmm.. Make sure you rinse the spinach and pat dry. You don’t want to cook dirty spinach. That’s not fun.
When cooking the spinach you want to add another tablespoon of grape seed oil. Sprinkle with a little salt and/ or lemon pepper. You want to cook the spinach until it is wilted and looks like the picture below. Drain the water from the spinach and set aside.
Now it’s time to do “the quesadilla.” If that is such a things. Well it is in my kitchen. Spray your cooking spray of choice (I like coconut oil spray) on the pan. Place the whole wheat tortilla on a pan at medium heat. I am using my griddle but you will want a pan big enough to fit your tortilla.
Sprinkle enough cheese to cover the tortilla.
Add cooked chicken.
Place the mushrooms, onions, and spinach on top of the chicken as you see fit.
Now top with cheese. Yes! More Cheese!
At this junction, you will place another tortilla on top. Spray the outside of the tortilla with your cooking spray, coconut oil in my case.
Then you are going to flip it to brown the other side. This takes skill. Ha, not really. You just want to make sure that you don’t flip it on the floor.
Please, don’t flip it on the floor.
Once it cooks on the opposite side for about 3-4 minutes, you can transfer it on to a plate and slice as you would a pie, a chicken and veggie pie.
