When the fall time hits, I am so ready to get into the kitchen and create some new recipes. This past June, the hubby and I took a much needed vacay. Our life has been topsy turvy and all over the place so being able to spend some quiet moments in a beautiful country was just what we needed. It was so nice to just be a bunch of crazy kids, even if just for a week. We needed it. We deserved it. One of our first stops was to Merida, Yucatan in Mexico. - 1 cup of brown sugar
- ½ cup of heavy whipping cream
- ½ stick of butter
- pinch of salt
- 2 tsp of vanilla extract
- Place brown sugar, heavy whipping cream, butter, and salt in a sauce pan on medium heat.
- Whisk slowly but constantly while cooking.
- Allow sauce to blend and come to a low boil.
- When sauce begins to boil, add vanilla extract and allow to cook for one minute.
- Take off the heat and let cool.
- Place the sauce in a container and serve or store. Enjoy!
A couple weekends back, hubby was off and we were having a lazy Saturday. Lazy Saturdays are great except for the part where we all don’t want to do anything (this includes me) but everyone is waiting for me to cook. Sheesh. This past Saturday was not exception. I just wanted to Netflix and chill like the rest of the house. Heh. So I made burgers. You know, something quick. I also made fries. The fries, y’all, were so good. They weren’t just everyday frozen fries out the bag either. I made Cajun ranch oven roasted fries. I am just going to reach my hand around and pat myself on the back because these oven roasted fries were so good!
This past Valentine’s Day weekend, the hubby and I had the chance to wander the fabulous streets of Verona, Italy. It was absolutely beautiful. The people, the sights, the food, and even the smells were all amazing. It felt like I was walking back in ancient times. You know, where real history took place.
Oh my goodness! I am loving the fact that it is finally warming up a bit. The sun is out. I am feeling like a lounge chair and a few days off. So that’s not happening, not right now anyway. I have been in a cheery and fiesta mood as of late that has translated into food. Of course, right?! Strawberry mango salsa is my latest obsession and it’s so timely with Cinco de Mayo around the corner.
Like most foods that I make, it is pretty simple to gather ingredients and an explosion of flavor. I mean seriously, life is too short to not eat to taste and enjoy amazing food. At least that is my mantra for the time being. Seasons change and so do my views but for now I want great looking and tasting food. And doesn’t this look yummy and don’t forget healthy!
One great things about this recipe is that incorporates strawberries which are in season and are yummy and sweet. A favorite childhood memory of mine is going to the strawberry farm and picking strawberries from the vine. I hope you enjoy this as much as my family does.
- •1 dozen strawberries -cleaned, tops cut off, and chopped
- •1 mango, peeled and chopped
- •¼ cup red onion, chopped
- •1 jalapeno, seeded and chopped
- •2 tbsp cilantro, finely chopped
- •freshly squeezed juice from ½ lime
- Mixed all ingredients together in your favorite bowl and chill until ready to serve.
